This is a cool, refreshing and crunchy salad that goes really well with spicy foods. If you have a food
processor, grating the vegetables is a snap – use the slicing blade for the cabbage and the grating disk
for the carrots. Or, make it really easy and buy a bag of coleslaw mix instead.
Level of Difficulty: Easy
1 small head of cabbage, grated
2 carrots, peeled and grated
½ red onion, minced
1 can black beans, rinsed and drained
2 ripe Haas avocados, diced
In a large bowl, combine the cabbage, carrots, onion and beans. Toss with dressing (recipe below) and
chill until ready to serve. Just before serving, add the avocado and toss again.
½ cup olive oil
2 teaspoons grated lime zest
1/2 cup freshly squeezed lime juice
1 teaspoon kosher salt
Combine all ingredients and whisk to blend.
