Mushroom & Swiss Roethlis-Burger Chili
Seems the fast-food places are always finding a way to sneak in a special Mushroom & Swiss burger
whenever they want to draw in some new business.  It works on Chili Dan every time!  Pittsburgh's Ben
Roethlisberger is a native of Ohio - home to the Wendy's chain, and gets his own "Honor Chili" based
on this Midwestern favorite!


Level of Difficulty: Medium

Serves 4-6.

Lineup:
2 tablespoons canola oil
4 medium onions, sliced
1 (8 oz.) package sliced mushrooms
½ cup dry sherry
2.5 lbs ground sirloin
2 teaspoons steak seasoning – we used KC Masterpiece
2 tablespoons Dijon mustard
¼ cup A-1 sauce or other steak-sauce
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon pepper
2 tablespoons Worcestershire sauce
1 (6 oz.) can tomato paste
1 (14.5 oz.) can beef stock or broth
2-3 cups shredded Swiss cheese


Playbook:
Heat the canola in a large stockpot over medium high heat. Add the onions and sauté, stirring
frequently for 6-8 minutes or until lightly browned. Add the mushrooms and sauté an additional 5
minutes. Add the sherry and cook, stirring well for 3 minutes. Remove onion mixture to a bowl and
reserve.

Add the ground sirloin to the stockpot and brown well. Drain any fat. Add the steak seasoning, Dijon, A-
1, chili powder, salt, pepper, Worcestershire sauce, tomato paste and beef stock. Stir well and bring to
a boil. Reduce heat, add the onion mixture back to the pot and simmer, uncovered for 20 minutes.
Ladle chili into bowls and top with Swiss cheese.
