We have no idea why everyone isn’t doing this. French onion soup style chili topped with onion rings!
It’s such a natural – you’ve got to try this recipe. The chili is loaded with caramelized onions and bits of
sirloin and then topped with cheesy onion rings. Seriously, it’s too good not to make. We saved some
work by using frozen onion rings, but if you’re even more inspired go ahead and make your own.

1/4 cup butter, divided
3 softball size Spanish onions, peeled and cut into rings
1 3/4 lbs. top sirloin, diced
6 cloves garlic, minced
4 jalapenos, seeded and minced
1 tablespoon Spicy Montreal Steak Seasoning
1/2 cup dry sherry
2 tablespoon Worcestershire sauce
1 (26 oz.) box beef stock
1 (16 oz.) bag frozen onion rings
2 cups Gruyere cheese, grated
1/4 cup chives, minced
In a large stockpot, melt 2 tablespoons butter. Add the onions and sauté until deep golden and
caramelized – about 45 minutes. Stir frequently.
In a sauté pan, melt remaining 2 tablespoons butter. Add sirloin and brown well. Reserve.
When onions are a deep caramel color, add garlic, jalapenos and steak seasoning. Saute another 3
minutes. Add sherry and deglaze by stirring up any brown bits on the bottom of the pan. Add
Worcestershire sauce and stock. Simmer for 30 minutes.
Prepare onion rings according to package directions. Adjust oven temperature to 350.
To serve, ladle chili into oven proof bowls. Top each bowl with a mound of onion rings and grated
Gruyere cheese. Bake in oven until cheese is melted and light golden brown. Top with a sprinkle of
