Biggest Losers Chili
What can you really say about a team that wins one out of every twenty games it plays?  Face it, the
Lions aren’t winners.  So with losing BIG on our mind, chicagofootballchili.com presents this low-fat,
Italian meatball style chili that satisfies even the biggest NFL-watching appetites, despite being virtually
a no-fat recipe, to save you time as well as calories. So eat up, feel good about it, and if you’re a Lions
fan - pass the crying towel, because the losing starts again this week!














Level of Difficulty:  Medium

Serves 6.

Lineup:
Turkey Meatballs:
1 lb. ground Italian style turkey
1 lb. ground turkey
1 small onion, minced
2 cloves garlic, minced
2 tablespoons dried parsley flakes
2 teaspoons oregano
1 teaspoon coarse salt
½ teaspoon black pepper

Chili:
2 (28 oz.) cans crushed tomatoes
1 cup red wine
1 (16 oz.) jar hot giardinara, rinsed and drained
2 large green peppers, diced
2 cloves garlic, minced
1 tablespoon Italian seasoning
1 teaspoon crushed red pepper flakes
8 slices Italian bread (should be large size)
2 cups part-skim mozzarella cheese, shredded

Playbook:
Preheat oven to 375°.

In a large bowl, combine all ingredients for turkey meatballs. Mix well and roll into 1-inch meatballs.
Place meatballs on ungreased baking sheet and bake at 375 for 20 minutes.

In a 5-quart crockpot, combine meatballs, crushed tomatoes, wine, giardinara, green peppers, garlic,
Italian seasoning and red pepper flakes. Mix well and cover. Cook on low 7-8 hours.

To serve, toast the bread and place a slice in the bottom of a bowl. Ladle chili over bread and top with
½ cup  part-skim mozzarella cheese. Repeat for remaining servings.
