Supermarket Bag Boy Chili
Quick, easy, crowd-pleasin’ fun. This Kurt Warner inspired enchilada-style chili is full of ready-made
meatballs and other inexpensive, off-the-shelf ingredients that make getting to the Grand Canyon State
a lot easier than you might have imagined.

Level of Difficulty: Super Easy

Serves 8-10.

2 tablespoons canola oil
1 onion, diced
1 green bell pepper, diced
1 tablespoon chili powder
1 (28 oz.) can mild red enchilada sauce
1 (28 oz.) can crushed tomatoes
1 (14.5 oz.) can whole kernel corn, drained
1 (3.8 oz.) can sliced black olives, drained
2 lbs. frozen ‘homestyle’ fully-cooked meatballs

Heat canola oil in a large stockpot over medium-high heat. Add onion and bell pepper and sauté 6-8
minutes. Add chili powder, enchilada sauce, tomatoes, corn, and olives. Bring to a boil. Stir in meatballs,
reduce heat to medium and simmer for 30 minutes.
